Banana and egg pancakes

These small, soft pancakes use just a banana and an egg for the batter. They are delicate, so make them silver-dollar size and turn gently.

    Mash the banana thoroughly, then beat in the egg until well combined.

  2. Step 2

    Warm the oil in a nonstick skillet over medium-low heat. Spoon in small rounds of batter, about 1 tablespoon each.

  3. Step 3

    Cook until the edges look set and the underside is golden, then slide a thin spatula underneath and turn carefully.

  4. Step 4

    Cook the other side until the egg is fully set; the center should reach 160°F (71°C). Serve with honey if desired.
