Dutch sauerkraut and potato mash
Potatoes, tangy sauerkraut, browned onions and bacon make a hearty mash to serve with sausage. Cooking the potatoes separately makes their texture easier to control.

A shallow dish catches the juices from gently steamed white fish. Scallions, a little sesame oil and lemon keep the finish simple.

Bring the steamer water to a boil. Pat the fish dry and arrange in a heatproof dish that fits above the water.
Mix the wine, sugar, salt and sesame oil. Spoon over the fish and scatter with scallion.
Cover and steam for 10–15 minutes, depending on thickness. The thickest part should reach 145°F (63°C) and flake easily.
Remove the dish carefully. Finish with cilantro and serve with the lemon wedges and pan juices.
