In 1998, Clinton named chicken enchiladas as a favourite dish. His archived White House biography also lists enchiladas and vegetable beef soup, while accounts from the Arkansas governor’s residence describe the chicken, chillies, tomatoes and cheese used in his meals.

The enchiladas are the clearest way to cook from that preference: rolled tortillas, shredded chicken, red sauce and melted cheese. Our beef stew is a thicker home interpretation of the vegetable-beef-soup side of the same recorded tastes, suitable when you want a one-pot dinner.
