  1. Warm oil in a saucepan over medium-low heat. Gently cook garlic for 1 minute without browning.

  2. Add passata, salt and pepper. Simmer uncovered for 15–20 minutes, stirring occasionally. Tear in half the basil.

  3. Cook pasta in a large pan of salted water according to its short package time. Reserve a mug of pasta water before draining.

  4. Toss pasta with sauce, adding a little reserved water to loosen. Serve immediately with remaining basil and optional Parmesan.
