An original state-dinner menu

Why this dinner?

Gerald and Betty Ford hosted Queen Elizabeth II and Prince Philip during the American bicentennial visit. The July 7 menu survives in the Ford Library: lobster, saddle of veal with rice croquettes and broccoli Mornay, garden salad, cheese, and a peach ice-cream bombe with fresh raspberries.

Reproducing the whole state dinner would be a fairly ambitious way to spend a Wednesday. We take its veal course and its peach-and-raspberry finish, then reduce the work. A boneless loin replaces the saddle. Potatoes and green beans replace the elaborate accompaniments. Dessert comes in a bowl, with no need to unmold a frozen centerpiece while everyone waits.
