Why this dinner?

December 29, 1963 · Stonewall, Texas

Lyndon Johnson welcomed West German Chancellor Ludwig Erhard to Texas in December 1963. Their visit included a barbecue in Stonewall. Johnson’s remarks survive, and the National Park Service identifies the food: barbecue ribs, German potato salad and Texas coleslaw.

That is already a sensible dinner plan. We keep the same three dishes and change the equipment. A covered pan and a low oven tenderize the ribs; a hotter finish sets the sauce. The potatoes get a warm vinegar dressing, while the slaw stays cold. This version is designed for four people and one ordinary oven. It follows the recorded menu without pretending to reproduce the original pit, sauce or cooks’ methods.
