Lemon muffins with a sugar dusting

Lemon juice and zest flavor a small batch of bright, sweet muffins. Mix the batter briefly once the flour goes in for a more tender crumb.

    Heat the oven to 350°F (175°C). Line a 12-cup muffin pan.

  2. Step 2

    Whisk the flour, baking soda and baking powder in one bowl. In another, whisk sugar, eggs, cooled butter, oil, vanilla, zest and lemon juice.

  3. Step 3

    Fold the dry mixture into the wet mixture just until no dry flour remains.

  4. Step 4

    Divide among the cups, filling about two-thirds full. If your pan has small cups, use an extra pan rather than overfilling.

  5. Step 5

    Bake for 20–28 minutes, until a tester comes out without wet batter. Cool in the pan for 5 minutes, then transfer to a rack. Dust with sugar if desired.
