Microwave paprika potatoes

Small potato pieces steam in the microwave, then get tossed with paprika butter and parsley. This version uses an ordinary microwave-safe bowl instead of the specialist browning skillet in the old recipe.

Step by step

  1. Step 1

    Put the potatoes and water in a microwave-safe bowl. Cover with a microwave-safe lid, leaving a vent.

  2. Step 2

    For a 900–1,000 W microwave, cook on high for 5 minutes. Stir carefully, re-cover and cook for 3–6 minutes more, until a fork passes easily through the largest pieces.

  3. Step 3

    Leave covered for 2 minutes. Open the lid away from your face and drain any excess water.

  4. Step 4

    Add the butter and paprika. Toss until the butter melts, then finish with parsley, salt and pepper.

About this recipe

Adapted from archive recipe 658. The browning dish and flour coating are replaced with covered microwave steaming. Never preheat an empty ordinary bowl as if it were a browning pan.
