Three-bean picnic salad

Cannellini, kidney beans and chickpeas make a substantial salad with celery crunch and a sweet-sharp dressing. It travels well in a cooler and gives the cook one less thing to do at serving time.

Step by step

  1. Step 1

    Drain the rinsed beans thoroughly and put them in a large bowl with the celery, onion, parsley and rosemary.

  2. Step 2

    Whisk the vinegar, sugar, oil, salt and pepper until the sugar largely dissolves.

  3. Step 3

    Pour over the salad and toss gently to coat. Cover and refrigerate for at least 2 hours.

  4. Step 4

    Toss again before serving and taste for seasoning. Keep chilled until it is time to eat.
