Heat the oven to 200°C / 400°F. Line a 23 cm / 9 in pie dish with one pastry sheet.
Toss peaches with sugar, cornstarch, lemon and cinnamon. Fill the shell and dot with butter.
Cut the second sheet into strips and weave a lattice, or use a full lid with several steam slits. Seal edges and brush with egg.
Bake for 20 minutes, then lower to 180°C / 350°F and bake 35–45 minutes more, until juices bubble in the centre. Shield edges if needed. Cool for at least 2 hours for neat slices.
